Rapid advances in large language models (LLMs) are transforming the role of students and principal investigators (PIs) in biomedical research. This perspective examines how LLMs can reshape the laboratory model as de facto “Co-PIs” for tasks ranging from literature triage to hypothesis generation. By clarifying both opportunities and risks, we propose a framework for efficient AI collaboration which aims to guide investigators and trainees in harnessing LLMs responsibly. |

Jul 16, 2025
This Berkeley brewery only makes one beer. And it's winning everything.
SFGATE
The only beer packaged and released in its history is also "the most awarded pilsner beer in the world."
A light bulb went off in Phil Sexton’s head the first time he drank a fresh Trumer Pils. He was sitting in an Austrian inn in the early 2000s, and the beer’s vigorous yet restrained flavor and perfect balance shocked him. “The life in the beer was extraordinary,” Sexton recently recalled to SFGATE. Sexton finished his beer and quickly placed a long-distance phone call to his friend Carlos Alvarez in Texas and told him he had found what they were looking for, setting off an unlikely chain of events that span the globe and eventually led to the creation of Trumer Berkeley, arguably California’s greatest beer curiosity. Trumer Pils is a 400-year-old Austrian beer that’s somehow made in Berkeley. Its creators have no roots in the Bay Area. It was dreamed up and funded by an Australian and a Mexican immigrant to Texas, neither of whom had spent any real time in California, yet it’s now one of the few breweries in the state that are actually expanding. The beer also happens to be delicious. Trumer Pils recently won its 21st gold medal, this time at the 2025 Australian International Beer Awards, and the company has taken to calling it the “the most awarded pilsner beer in the world.” Even if it isn’t your favorite beer, it’s impossible to deny that it’s crisp and clean in ways that nearly every other local pilsner struggles to be. The green bottles of Trumer have become beacons of good beer in beer aisles across California, which likely never would have happened without that light bulb going off in Austria. A pioneering beer salesman The original Trumer Brauerei is in the Austrian city of Salzburg, where it has been brewing beer at the foot of the Alps for over 400 years. But it would have never come to the United States if it weren’t for Alvarez, a beer executive who had already helped change how Americans drink beer long before he started working on his Trumer project. Born in Mexico in 1950, Alvarez started his career working for his father’s Corona distributorship in Acapulco, according to an obituary published after he died in 2024. In the late 1970s, he took a job working as the export manager for Corona’s parent company, Grupo Modelo, despite his father’s advice that exporting Mexican beer was never going to work. Mexican beer wasn’t popular in the U.S. at the time, and this was long before Corona with lime became ubiquitous and Modelo was the No. 1 beer in America. Regardless, Alvarez believed he could make it work and was soon going door to door in Austin, Texas, selling cases of Corona beer. Alvarez and Grupo Modelo were successful, establishing Corona in the United States, and by the 1980s, he was living in Texas full time and working as a Corona importer. He formed his own company, the Gambrinus Company, and bought the struggling Spoetzl Brewery in the city of Shiner and turned its flagship Shiner Bock into one of the biggest craft beers in America. In 1995, Gambrinus bought Portland’s BridgePort Brewing Company, expanding it to also become one of the largest craft breweries in the country, although it closed in 2019. By the late 1990s, Alvarez had a string of major wins in craft beer and was looking for another opportunity. So he turned to his longtime friend Sexton, an Australian beer pioneer who opened Matilda Bay Brewing Company in 1983, Australia’s first modern craft brewery. The two met while Alvarez was traveling in Australia trying to sell Corona, and Sexton said Alvarez’s charm was uncanny, like the time he stood up to give a speech at a beer conference but instead serenaded the 300 attendees with an impromptu Spanish song. “I’ve been in the beer industry since 1975, and I’ve traveled all around the world, and he was the most amazing and charismatic man I’ve ever come across,” Sexton said. That charisma would come in handy for Alvarez’s next act. We found it Alvarez’s Gambrinus Company, which is still exclusively owned by his surviving family members, was already running two prominent American craft breweries by the turn of the century, so he decided he wanted to bring European beer to the United States. He trusted Sexton’s taste, so he sent the Australian to Europe to find something that could be worth importing to the United States, according to John Brozovich, the current president and CEO of the Gambrinus Company and Alvarez’s son-in-law. “The mandate was very broad. Just go out and find something special, unique,” Brozovich told SFGATE. But a simple beer import account turned into something else after Sexton drank that first glass of fresh Trumer in Salzburg. Most beer does not age or travel well, especially pilsner, which is an incredibly delicate beer style. Pilsner is very bitter with a heavy dose of hops, but those hops lack the pungent aromas of IPA, instead offering crispness without oppressive flavor. It’s also a lager, which means it’s fermented cold with very little yeast character. This lack of yeast and hop flavor allows the malt to show off, but it also leaves the beer vulnerable to damage from being shipped across the world. Imported European lagers rarely, if ever, taste as good as they do in their home cities. After Sexton’s trip, Alvarez went back to Salzburg and tasted the fresh pilsner himself. He realized it was never going to taste the same if it spent months in a shipping container crossing the ocean, so he said, according to his obituary, “When the beer is good, you import the beer. When the beer is great, you import the brewery!” Trumer has been owned by the same family for eight generations, and Sexton said it took “a lot of talking to the Austrians to convince them that we were going to do it properly — that was the hardest part.” History | Why a wealthy banker blasted a huge hole in a Bay Area cliffLocal | There's a mansion hidden directly under the Bay BridgeCulture | Inside the Bay Area’s cult-like obsession with Beanie BabiesLocal | The world's last lost tourist thought Maine was San Francisco Get SFGATE's top stories sent to your inbox by signing up for The Daily newsletter here. Alvarez was able to convince the Austrians to let him build a sister brewery in the United States, but now he needed a location. He eventually chose Berkeley because the Bay Area’s water is good for lager, there happened to be a brewery for sale in Berkeley that had the right brewing equipment, and the Bay Area’s residents seemed likely to be receptive to this new idea in beer, according to Brozovich. “Carlos really loved this concept of having such an incredible cosmopolitan metro right at your doorstep, being East Bay, but also San Francisco itself down into Silicon Valley, up into Napa. It’s an incredibly diverse area with so much culture, so much great cuisine,” Brozovich said. Now they just had to brew an actual beer. ‘This is showtime’ Lars Larson was brewing at Bridgeport Brewery when he heard his boss was opening a lager-only brewery in Berkeley. Larson is German himself and speaks the language fluently, so he jumped at the opportunity and was selected to re-create a classic European beer in the New World. He flew to Austria to learn from the original brewers and then came back to California and brewed dozens of test batches to try to dial in that old-world flavor. Larson said Berkeley’s water made it easier to re-create the Austrian flavor. “We’re starting with almost the perfect water for making these beers,” Larson said. But he was still nervous when the Austrian brewmaster and the family owners of Trumer came to taste what he was working on in California. “OK, this is showtime,” Larson said he was thinking at the time. The Austrians were impressed, and Alvarez’s latest dream hit Bay Area shelves and bars in 2004. Beer sales were slow going at first, Larson said, but before long, people noticed that there was something special about this lager. A 2006 Oakland Tribune article called Trumer Pils a “primo pilsner” and an “elegant beer.” The world’s beer judges have agreed. Within just a year of being released, it won a silver medal at the Great American Beer Festival, the most respected beer competition in this country, and has since scored dozens of medals across the world. Sexton helped the Trumer project get off the ground but soon went back to Australia, where he continued to work in the beer industry. His latest project is Keeper Brewing, a pilsner-only brewery that he launched in 2024 with his son Harry. Phil Sexton said Trumer was “absolutely” the inspiration for creating a brewery dedicated to only pilsner, a style he says you can easily drink for hours on end. “You don’t tire of it,” Sexton said, referencing the appeal of pilsners, like Trumer and Keeper. “It’s not that it’s not noticeable; it’s that there’s nothing in there that you don’t want. Often I have beers that are out of balance or just stale, or too obvious.” Back in the Bay Area, Trumer Berkeley has been able to steadily grow its output while selling a single delicious pilsner in an otherwise ale-dominated market. For its first two decades, the brewery had no on-site taproom and instead just sold its beer at bars and markets around the state. That changed in 2023, when Trumer unveiled a taproom complete with an accompanying beer garden beneath its towering tanks of lager. Trumer Berkeley has packaged and released only one beer in its history, but the taproom has given Larson and his team more room to experiment with other smaller-batch beers that are served only at the brewery, like a “Northern Lager” made with aromatic American hops. They plan on releasing it in kegs and cans this summer, making it only the second beer ever packaged by the brewery, according to Larson. And the brewery is on track to brew 28,000 barrels of beer this year, the most it’s made since it was founded. This expansion comes as other craft breweries across the state and country are shutting down. “It’s pretty satisfying, especially right now when people are struggling,” Larson said. “We feel very thankful that we’re getting a positive reception. We’re seeing a lot of people turning more towards lagers. It’s nice to see people are respecting it and enjoying it more.” — Decades-old Bay Area cafe receives abrupt eviction notice— White House posts misinformation about In-N-Out menu change— Several Calif.
